Grapes | Single Vineyard: Kfar Yuval | Aged 10 months
This Shiraz displays the subtle
aromas of strawberries, cherries, and
plums, sweet toffee and an elegant
bouquet of coffee beans and mocha
derived from the French Oak Barrels
in which it was aged.
The wine is from the free run
of the crushed grapes and was fermented
at 25 ?C in order to preserve the aromas.
It completed the malolactic
fermentation in French Oak Barrels (300
Liters) and was allowed to age
for 10 months.
The grapes were harvested from
Kfar Yuval vineyard that is on the
northern
border of Israel. This is
the first Shiraz produced by the Tishbi
Estate Winery
and also my first
as winemaker here. Great efforts were
made to produce a
varietal wine
with maximum suitability between the
climate and the geography
in this
region.
